Experiment On Vitamin C
Iodine was used to test vitamin C through titration process. At first, our group have choose broccoli to test. Then, we have make several different type of experiment using the broccoli. Constant result of 12.00 g was being measurred. For the first one, we test the raw broccoli.Raw broccoli was being chopped into pieces. Later on, broccoli was grind and it was extract into a 250 ml Erlenmeyer flask or beaker. 2 drop of hydrochloric acid were dropped and 5 ml starch in the extract. Make sure, we put the mixture into conical flask. The end, we make the titration that is using iodine. Iodine is relatively insoluble, but this can be improved by complexing the iodine with iodide to form triiodide. Triiodide oxidizes vitamin C to form dehydroascorbic acid.
Our group have chooses broccoli to conduct experiment. So, here I will discuss more about broccoli. The first one is raw broccoli and the vitamin C is the highest because it is combined the upper side and the stem. As we read the other information before this that the cooked broccoli will reduced the vitamin C. So , we wanted to prove the experiment to know the statement. Later on, after conducting the experiment we did prove the hypothesis.
At first, the broccoli was boiled for almost 10 minute to 20 minutes, later on there was some reduction in Vitamin C. This is because, as was mentioned previously about Vitamin C, they are highly sensitive to temperature. Thus, when it goes as boiling the Vitamin C starts to reduce every single minute. In a nutshell, vegetables such as broccoli or other products which are high in Vitamin C such as lemons, they should not be boiled for too often or too long. This is because, as was proven in this experiment Vitamin C will reduce. We would be losing the amount of Vitamin C in the foods. Now the question that arises ; What are the other ways to cook the foods ?From my opinion, I would really suggest to use the steam method for cooking up the food. For a fact, steaming could store the amount of Vitamin C compared to the boiling method.
Talking about the parts of broccoli, hypothesis now arises; Stem contains more vitamin C compared to the upper side which is the flower part. Now, we should know the importance of the stem of broccoli . In this experiment, we was also required to compare the result with other group. We had concluded that, broccoli is one of the vegetable which has the highest vitamin C. The items were compared was vegetables and juices.
